When we don’t have time to make home made beans we like to use canned beans. We have full time jobs so this is a great alternative.
For this recipe use 1/4 pound of pork chorizo and cook in a cast iron and fully cook.
Then add 2 chopped jalapenos and 3 tbs of chopped onion.
add your can of pinto beans. do not strain you need the liquid its in.
Bring to a boil and smash them to your desired creaminess.
There is not need to add oil when cooking the chorizo it will release natural fat. No salt is needed either. Its not necessary to smash the beans after you bring to a boil.

I love that you guys are posting authentic recipes but with short cuts. I don’t have the time to be in the kitchen and cook the recipes the way my mom did. It’s nice to see familiar food made in a way I can definitely cook.

That’s our plan. To share food that can be made when people get off work and still taste decent. Of course on the weekend it’s a different story if time permits.

Thank you for this easy peasy recipe which was quick and excellent. I did add a little extra chorizo, you can’t go wrong with that. The next day it reminded me of refried beans (jazzed up refried beans) so now I’m thinking of new uses. My wife wants to use it as one layer in a taco parfait. Thanks again, Tony.
