I don’t know the real name for this recipe but I call it ensalada de repollo or Mexican coleslaw. This usually goes as a side dish with birria. Can be sued with any meal I suppose.
Will need 1 bag of coleslaw, 1 can of mixed vegetables ( drain liquid), 1/2 cup of mayonnaise , 1/2 cup of sour cream, about 1 tsp of salt and black pepper.
mix together and let it chill in the refrigerator for 1 hour before serving. taste it and add salt or black pepper to your liking.

Yes. Hopefully we get more time to cook. All of our cooking is usually done after work and before we take our kids to their after school activities
