Start with bringing to a boil 5 guajillo chiles , then place in a blender with 3 garlic cloves and 1/4 onion. add the water from the pot you just used and blend until smooth. Then strain and set aside.
For this recipe you need 4 potatoes chopped, 4 celery stalk chopped, 3/4 cup of baby carrots.
In a pot add some water and the carrots and bring to a boil. Then add the potatoes and celery and bring to a boil. Lower the heat to medium low and add the sauce and continue to cook until potatoes are fork tender.
When potatoes are fork tender add your shrimp ( we used 2 lbs) and some 1/4 bunch of cilantro cook for another 15 minutes and its done. Add about 1 tbs of salt and maybe 1 tbs of knorr chicken bouillon. At this point its up to you how much salt you want. Taste and make adjustments.
When plating add chopped cilantro and onion with a squeeze of lime juice.
