This breakfast is a family favorite and of course easy to make with very little ingredients.
Make your own corn tortilla chips or buy them. Many Hispanic stores make their own and sell them. Don’t use the chips from the snack isle it wont work.
In a pot boil 6 serranos and 6 tomatillos until soft. Then place in a blender with 1/4 onion and 1/4 bunch of cilantro, 1 tablespoon of salt and blend with 2 cups of water.
In a pot add a little oil enough to cover the bottom. One its hot add the green salsa and fry until it boils. Then add the tortilla chips and immediately turn of heat. The residual heat will cook the chips and still have a slight crunch. Garnish chilaquiles with chopped onion, sour cream and queso fresco
Serve with beans and enjoy.
