Here’s our version of frijoles charros. Add or take away ingredients to your liking.
Start with 1.5 lbs of pinto beans or peruano beans we used peruano. Soak over night in water.
In a medium heat cook beans until tender. It will take about 1.5 hours. The time will vary. Add water if necessary. Beans need to be covered in water the whole time.
In a skillet cook 1 lb of bacon but don’t cook until crispy.
Then add 1 lb of smoked chopped sausage. cook for 3-4 minutes then remove bacon and sausage and set aside.
Cook 1 lb of your favorite chorizo. This needs to be fully cooked.
Get a some jalapenos. Use as much as you like.
Combine all the ingredients above to your beans. Bring to a boil and its ready to eat. This is our preferred way to do this recipe. You can add chopped onions and garlic. Chopped ham and tomatoes. Make this how you prefer and to your families liking.

No salt needed since you will get it from the bacon,sausage and chorizo.
