Here is our version of albondigas.
Will need the following.
1. 3 tbs of chopped mint
2. 3 tbs of chopped parsley
3. 3/4 cup of uncooked rice
4. 1 egg
5. 1.5 lbs of ground beef 80/20
6. 1 tbs of garlic salt
Mix all together in a bowl and make little meatballs.

In a pot boil some water and add first baby carrots and add one meat ball at a time to the boiling water. Add as many carrots as you want. After that bring down to a medium heat.

after 10 minutes or so remove the foam that comes to the top.

meanwhile in a blender add 2 tomatoes, 1/2 onion, 3 garlic cloves and 3 tbs of chipotle sauce. add some broth from the pot and blend until smooth. once blended in a sauce pan fry the sauce with a little oil and bring to a boil.

Then add to the pot.

Chop 3 potatoes and 3 zucchinis and add to the pot

taste the broth and add salt if necessary.

total cook time is about 35-40 minutes. potatoes and carrots should be soft. The meat ball should look smooth.
