You can use jalapeños or yellow peppers for this recipe.
Cut the center of the jalapeno and remove seeds and vein.
Stuff with your favorite cheese. We used queso fresco and mozzarella.
Use regular bacon and wrap tightly using toothpicks to secure.
Optional is to season with your favorite barbecue rub. Place them in your oven or grill at 350 turning once. If cooking on the grill cook indirect or two zone cooking. Cook until the bacon is crispy. This will take from 20-30 minutes.

Every time I see you guys cooking this jalapenos my mouth just waters. What is two zone cooking? Got myself a big note book to take notes. =)

Its when you cook opposite of your heat source or coals. For instance….
on a gas grill turn on the left burners and right burners. cook on center where the burner is off. That’s indirect cooking. on a kettle grill lit charcoal get banked on one end and you cook where there’s no coals
